Jeune chef au parcours fulgurant et au look flamboyant, Nicolas Pourcheresse, 43 ans, est l\u2019homme de tous les d\u00e9fis. Ses deux derniers en date : l\u2019\u00e9mission Top chef 2015<\/a> et les fourneaux du futur boutique-h\u00f4tel Le Clarance<\/a>, dans le Vieux-Lille<\/strong>.<\/p>\n

Sacr\u00e9 plus jeune chef \u00e9toil\u00e9 de l\u2019ann\u00e9e 2005 dans le Jura, form\u00e9 aux c\u00f4t\u00e9s d\u2019Alain Passard<\/strong>, ce prodige des fourneaux \u00e0 la personnalit\u00e9 aussi atypique que d\u00e9capante pose son tablier dans les cuisines du tout nouvel H\u00f4tel Clarance,<\/strong> qui ouvrira ses portes dans le Vieux-Lille d\u00e9but avril. Ce boutique-h\u00f4tel de charme vise d\u2019embl\u00e9e le label 5 \u00e9toiles et s\u2019offre avec Nicolas Pourcheresse une signature gourmande et in\u00e9dite.<\/p>\n

Ancien chef du restaurant Meert<\/strong> entre 2008 et 2011, il en a fait \u00ab the place to be \u00bb, puis cr\u00e9ateur du steakhouse Le Saint-Jo<\/strong><\/a> et membre du collectif Mange Lille !<\/strong>, ce jurassien tomb\u00e9 amoureux de Lille et de sa r\u00e9gion, assume une cuisine,\u00ab \u00e9bouriff\u00e9e, pure et brute \u00bb. A son image. Entre 2011 et 2013, Nicolas Pourcheresse se lance dans un tour du monde \u00e0 l\u2019apprentissage des nouvelles cuisines.<\/p>\n

Am\u00e9rique du sud, Sri Lanka, Madagascar, New York, Indon\u00e9sie, Maroc : de ce p\u00e9riple, il en a retenu le calme, la tranquillit\u00e9, la volont\u00e9 de magnifier les produits, bref l\u2019humilit\u00e9. D\u2019ailleurs il reconna\u00eet volontiers qu\u2019il y a laiss\u00e9, quelque part l\u00e0-bas, son \u00ab ego surdimensionn\u00e9 \u00bb, cette assurance provocante qui aga\u00e7ait les uns autant qu\u2019elle s\u00e9duisait les autres. \u00ab La gastronomie refl\u00e8te souvent notre perception des choses. Ces voyages ont autant form\u00e9 mon palais que ma vision du monde, \u00bb reconna\u00eet-il. Rigueur, cr\u00e9ativit\u00e9 et excellence, Nicolas Pourcheresse n\u2019a plus que ces mots \u00e0 la bouche. Candidat \u00e0 l\u2019\u00e9mission Top Chef 2015<\/strong>, diffus\u00e9e tous les lundi soirs sur M6, il n\u2019a pas finit de nous surprendre !<\/p>\n

Si l\u2019ann\u00e9e 2005 l\u2019avait r\u00e9v\u00e9l\u00e9, dix ans plus tard, 2015 risque bien d\u2019\u00eatre celle de sa cons\u00e9cration !<\/p>\n
